It is found in tropical Asia and Africa where it is widely used as a leaf vegetable. It is native to the Indian subcontinent, Southeast Asia and New Guinea. It is reportedly naturalized in China, tropical Africa, Brazil, Belize, Colombia, the West Indies, Fiji, and French Polynesia.</p> <p>Basella alba is known under various common names, including Malabar spinach, vine spinach, and Ceylon spinach.</p> <p>Basella alba is a fast-growing, soft-stemmed vine, reaching 10 meters (33 ft) in length.[citation needed] Its thick, semi-succulent, heart-shaped leaves have a mild flavor and mucilaginous texture. It is rich in vitamins A and C, iron and calcium. It has been shown to contain certain phenolic phytochemicals, and it has antioxidant properties</p> <p>It is also called Malabar Spinach. There are two varieties - green and red. The stem of the Basella alba is green with green leaves and the stem of the cultivar Basella alba 'Rubra' is reddish-purple; the leaves form green and as the plant reaches maturity as a anual, older leaves will develop purple pigment starting at the base of the leave and working towards the end. The stem when crushed usually emits a strong scent. Malabar spinach can be found at many Asian supermarkets, as well as farmers' markets.</p> <p>Basella alba grows well under full sunlight in hot, humid climates and in areas lower than 500 meters (1,600 ft) above sea level. The plant is native to tropical Asia.[5] Growth is slow in low temperatures resulting in low yields.[citation needed] Flowering is induced during the short-day months of the year. It grows best in sandy loam soils rich in organic matter with pH ranging from 5.5 to 8.0.</p> <p><b>Uses</b></p> <p>In the Philippines, the leaves of this vegetable are one of the main ingredients in an all vegetable dish called utan that is served over rice. It is usually cooked with sardines, onions, garlic, and parsley. In Mangalorean Tuluva cuisine, a coconut-based gravy called gassi is paired with the Basella plant, making a delicacy called Basale gassi to be eaten with rice dumplings called pundi soaked overnight in the gravy, or with red rice. Some variations have tiny prawns, clams, horsegram or dried fish in the gravy as well. Beary Muslims of coastal Karnataka prepare Basalede kunhi pindi (small rice dumplings smeared in gravy prepared from Malabar spinach and dried tuna ). In Bengali cuisine it is widely used both in a vegetable dish, cooked with red pumpkin, and in non-vegetarian dishes, cooked with the bones of the Ilish fish and may also be cooked with shrimps. The fine-textured roots store well and they are absolutely delicious cooked and added to mashed potatoes, casseroles etc.</p> <p><strong>Sowing Instructions</strong></p> <p><strong>Site &amp; Soil</strong></p> <p>Swedes prefer medium soil which contains lots of nutrients although they will be happy growing in most soil types. They are unfortunately prone to club root so make sure the soil is not too acidic. Acid soils encourage clubroot. The ideal pH for swedes is somewhere between 7.0 and 7.4. If the soil is short of nutrients then add some well-rotted manure a month or so prior to sowing seed. If manure is not available then add a long-lasting fertiliser such as bonemeal or similar. Swedes don't like being waterlogged. Some varieties have a deep maroon center of the leaf with streaks of red, purple and green. The Red variety produces feathery purple, magenta or red flowers from the central stalk which is packed with edible seeds. Though the flower buds are edible, once they mature and become bushy they are not palatable and should be avoided. The young leaves are slightly astringent when raw, but are nutty and mild, like spinach. Larger, more mature leaves are best for stewing or braising, similar to chard or beet green. </p> <p>Amaranth is the commonly used name for anyone of the 60 different species found in the Amaranthaceae family. The name comes from the Greek amaranths, “one that does not wither," or “the never-fading”, alluding to the brilliant bushy flowers that retain color long after harvest. Often regarded as a common weed, one green variety is named “pigweed”, the plants are commercially cultivated for their edible seeds, leafy greens, and decorative blooms. The plants are consumed as a green vegetable primarily in Asian cultures, where they are known as callaloo in the West Indies, chawli leaves in India, and cowpea leaves in Africa. Red Amaranth leaves are more often used for their ornamental purposes or even to make red dye, such as the “Love Lies Bleeding” varietal. </p> <p>Amaranth leaves are nutritionally similar to beets, Swiss chard, and spinach, but are genetically closer to their wild ancestors and offer a far superior source of carotene, iron, calcium, protein, vitamin C and trace elements. </p> <p>Amaranth greens may be eaten raw or cooked. The younger leaves are mild and tender while the more mature plants are slightly fibrous and develop a bitter flavor. Select Amaranth leaves that have small thin stems and lack any flower buds. Although edible, the blossoms usually indicate that the leaves are past their prime for eating. Add the greens to salads and soups or briefly sauté with oil similarly to spinach. Complimentary flavors include bacon, ham, poultry, anchovies, garlic, onion, sesame seeds, soy sauce, lemon, mushrooms, oregano, dill, cumin, goat cheese, parmesan, ricotta, mustard, walnuts, and curries. </p> <p>As a grain, Amaranth has a long and colorful history throughout Mexico and South America. It was a major food source for the ancient Aztecs and was also used in their ceremonial religious practices. The grains were combined with honey and formed into the likeness of a deity, worshiped and then eaten in a communal feast.
