The outer skin of the Marvel of Venice bean ranges from a light to honey yellow color and can be from seven to ten inches in length. Inside it contains petite beans which depending upon variety can be black or white in color. When young the bean pod is edible in its entirety and offers a sweet bean flavor and tender yet meaty texture. Look for fresh beans whose pods are firm and unblemished, beans should be crisp and snap when you break off the tip of the pod.

Seasons/Availability
Marvel of Venice beans are available in the summer and early fall months.

Current Facts
The Marvel of Venice bean, botanically known as part of Phaseolus vulgaris, is a romano type bean and a pole variety that grows in a vining fashion. Romano beans are also further categorized as a European snap bean type and are thought to be a predecessor of the modern snap bean. An heirloom, Italian bean the Marvel of Venice bean is sought after for its superior fresh bean flavor which is rich and buttery. Romano type beans such as Marvel of Venice are unique among other beans and are recognizable by their meaty texture and flattened shape.

Nutritional Value
Marvel of Venice beans contain a significant amount of vitamin C and also offer some protein, vitamin A, calcium, iron and fiber.

Applications
Marvel of Venice beans can be used whole when fresh in both raw and cooked preparations. Additionally, bean pods can be left on the vine to fully mature and dry out then the inner beans removed and utilized as a dried or shelling bean. Marvel of Venice beans can be braised, steamed, simmered, grilled, deep-fried and sautéed. Add lightly cooked or raw beans to salads or serve alongside dips as a crudité. The beans offer a meaty texture when cooked and can stand up to prolonged cooking preparations making them an excellent addition to stews, soups or served braised as a side dish. Their flavor pairs well with tomatoes, garlic, shallots, fennel, lemon, dried red chile, olive oil, balsamic vinegar, fresh herbs, butter, pancetta, hazlenuts, pecorino and parmasean cheese. Beans will keep best if stored in a plastic bag, refrigerated and used within five to seven days.

Ethnic/Cultural Info
Also known as Meraviglia di Venezia in its native Italy the Marvel of Venice is classically used there in the tomato sauce based dish, fagiolini al’uccelletto. Romano type beans such as Marvel of Venice are the preferred bean of Italian cuisine and appear in many summer and fall preparations. The Marvel of Venice bean’s popularity extends to France and Spain as well as to Austria and Germany where it is sold under the name Rheingold.

Geography/History
Marvel of Venice beans are an heirloom romano variety bean believed to be native to Italy. Romano type beans are native to southern Europe and are known to be the snap bean of Europe. Be sure to provide adequate support when planting as the Marvel of Venice bean pods grow on vigorous vines that can climb up to seven feet of support trellis or poles. The white seeded variety is known to produce beans earlier in the season than the black seeded type. Like most beans they are not frost tolerant and prefer warm growing conditions with soil temperatures above sixty degrees. Plants can provide significant yields in ideal growing conditions and beans should be harvested frequently to prolong production.

GROWING TIP: All beans and peas are legumes and benefit from "inoculating" with rhizobacteria. These bacteria do the work of taking gaseous nitrogen from the air and "fixing" or concentrating it in pink root nodules which then slough off, adding nitrogen to the soil in a form other plants can take up as a nutrient. Inoculating your beans and peas will increase germination, and the health of your plants, helping them growing large roots and thus healthier plants. Growing pole beans with corn provides an extra shot of nitrogen to the corn, a wonderful natural symbiotic relationship that the Native Americans understood very well. You will see a big difference in overall results. Healthy legumes should also be turned under the soil when production ends as they are excellent green manure for your next crops.

Beefsteak Tomato Seeds MORTGAGE LIFTER

Price for Package of 5 seeds.

An outstanding Beefsteak Heritage variety, delivering large meaty fruits of excellent texture and flavour with few seeds. Indeterminate. The name was given by a 1930's farmer whose bumper crop of this variety enabled him to save his farm from repossession

The Mortgage Lifter tomato was developed in the early 1930's in Logan, West Virginia by a radiator repairman, M.C. "Radiator Charlie" Byles. Without any experience in breeding, he made a successful cross of four of the largest tomatoes he could find - German Johnson, Beefsteak, an Italian variety, and an English variety. Radiator Charlie sold the first seedlings of his new tomato in the 1940's for one dollar each to customers who drove up to 200 miles for his famous plants that bore tasty tomatoes averaging two and a half pounds. With these sales, Charlie managed to pay off his $6,000 mortgage in only six years, and so the tomato was named Mortgage Lifter.

Sow in spring under glass or on a windowsill 1/16 inch deep. Germination takes around 6-14 days at 65-75F.

Transplant the seedlings when large enough to handle into 3 inch pots.

Grow on under cooler conditions and when about 8 inches tall, either plant in their growing position in the greenhouse or gradually acclimatise them to outdoor conditions and plant out 18 inches apart in a warm and sunny spot in moist, fertile well drained soil and keep watered.

What's the difference between "indeterminate" and "determinate" tomatoes?

Determinate tomatoes, or "bush" tomatoes

are varieties that grow to a compact height (generally 3 - 4'). Determinates stop growing when fruit sets on the top bud. All the tomatoes from the plant ripen at approximately the same time (usually over period of 1- 2 weeks). They require a limited amount of staking for support and are perfectly suited for container planting.

Indeterminate tomatoes

will grow and produce fruit until killed by frost. They can reach heights of up to 12 feet although 6 feet is normal. Indeterminates will bloom, set new fruit and ripen fruit all at the same time throughout the season. They require substantial staking for support and benefit from being constrained to a central growing stem.

Under good conditions in size, shape and internal structure it may be considered a "beefsteak".Tigerella is generally smaller than the Mr Stripey variety and the colors are less defined, they actually are two distinct different heirloom varieties.Tigerella isn't as sweet or "low-acid" as the Mr Stripey variety either. Like other heirlooms, Mr. Stripey has an appearance that differs considerably from other tomatoes. In coloration it is generally somewhat more yellow near the stem and more red towards its underside, with gentle stripes of red and yellow blending into each other along the sides. This coloration may extend into the interior of the fruit, which tends to be more yellow than red.

When conditions are right and the fruit is fully ripe the taste will be surprisingly sweet and mild, superior to most store bought varieties. The mild character of the tomato flavor is best used where it is intended to blend in with other flavors such as in a pasta sauce or salad. The flavor in good conditions and when fully ripe is pleasingly sweet when sliced raw - excellent for hors d'oeuvres. The ripe flesh is soft, juicy and extremely tender.

Indeterminate

What's the difference between "indeterminate" and "determinate" tomatoes?

Determinate tomatoes

or "bush" tomatoes, are varieties that grow to a compact height (generally 3 - 4').
Canary Yellow Melon Seeds

Price for a Package of 20 seeds.

The Canary melon (C. melo (Indorus group)) or winter melon is a large, bright-yellow melon with a pale green to white inner flesh. This melon has a distinctively sweet flavor that is slightly tangier than a honeydew melon. The flesh looks like that of a pear but is softer and tastes a little like a cantaloupe. When ripe, the rind has a slightly waxy feel. The name comes from its bright yellow color, which resembles that of the canary. This melon is often marketed as the Juan Canary melon or "variety melons" and can be found in various sizes and shapes. This melon is common in parts of Asia, e.g., Japan and South Korea.

The outer skin of the canary melon is softer than that of cantaloupe or honeydew, and preparation of the melon for consumption is best administered with a knife. The elasticity of the skin resists blunt trauma induced from chopping, punching or hammering.

They are best stored at 15°C.

Melons are a refreshing and delicious addition to your garden. With so many sizes, shapes, and tastes, there is a type of melon that just about everyone loves. Some well-known melon varieties include muskmelon, watermelon, honeydew, and cantaloupe.

Planting, Growing, and Harvesting:

Plant melons in soil with plenty of calcium to help prevent blossom-end rot from occurring. Melons do best in warm soil with plenty of nutrients. You can direct-sow the seeds in rows, or by planting them in hills with a few seeds in each to improve drainage and soil warmth. Be sure melons get a steady water supply. When planting, keep in mind that melon vines with take up a good amount of space in the garden, with some kinds stretching up to 10 or 20 feet. You can grow some melons vertically if you prefer, using a strong, large trellis.

Harvest melons by cutting them from the vine once they are ripe. There are some ways to help you figure out if melons are ripe and ready to pick. In general, look for a dull thumping noise when you tap on the melon, a sweet fragrance when smelling the rind, softening, and changes in color.

Recipes/How to Use:

Melons are wonderful all by themselves. You can also add them to fruit salads, desserts, or blend them into drinks.

Refreshing Melon Smoothie

1/2 cup yogurt

6 ounces melon (such as cantaloupe or honeydew), cut into cubes

1/2 banana

3-4 strawberries

1/2 cup juice of your choice (such as orange or apple juice)

Add ingredients to a blender and blend completely.
Carnival Squash Seeds

Price for Package of 5 seeds.

Carnival squash is distinguished by its deeply furrowed top-shape and of course, its variegated patterns of orange and green colors. The Carnival squash's thick exterior contains spotted and striped colors of white, orange, yellow and green, depending on its level of maturity. The presence of post-harvest green coloring indicates that the squash is still at its peak maturity. As the squashes ages, it will eventually only maintain orange and cream colors. The raw flesh of the Carnival squash is firm, dry, and pale orange in color with a large and fibrous seed cavity. When cooked its texture is soft and melting with a fragrant aroma and its flavor; slightly nutty, buttery, and sweet with nuances of maple syrup, similar to that of butternut squash.

Seasons/Availability

Carnival squash is available in the fall and winter months.

Current Facts

Carnival squash, botanically known part of Cucurbita pepo, is a hybrid of the sweet dumpling squash and the acorn squash. Classified as a type of acorn squash and a vegetable gourd the Carnival squash is a relatively new variety of squash and is sought after for its uniquely patterned and colored exterior. The color variance in the rind of the Carnival squash is the result of seasonal temperature variations with warmer temperatures producing Carnival squash with slightly more pronounced green stripes.

Nutritional Value

Carnival squash contains potassium, vitamin A, and vitamin C. Additionally they offer some calcium, magnesium, folate, omega-3 fatty acids and omega-6 fatty acids.

Applications

The Carnival squash can be used in the same applications as other orange-flesh colored winter squashes such as butternut, acorn, and kabocha. It can be steamed, boiled or sautéed though the most effective way to achieve the squash's optimal flavor and texture is by roasting it. It can be roasted whole, cut in half or into pieces. After roasting Carnival squash can be blended to become soup or sauce. The roasted squash can be added to stews, risottos, curries, or pasta dishes. The squash can also be utilized as an edible vessel, as its size often lends itself to individual sized serving portions. Carnival squash is best highlighted when prepared with the addition of butter and spices such as ginger, garlic, cinnamon, nutmeg, and pepper. It pairs well with pork, lamb, other roasted winter vegetables, maple syrup, toasted walnuts and pecans, and aged cheeses such as pecorino. It is best to store Carnival squash in a cool, dark space for optimal shelf-life. If stored properly uncut squash will keep for up to a month.

Ethnic/Cultural Info

The Carnival squash was developed by plant breeder Ted Superak of Harris Seeds in North America. The Carnival squash was developed with the intent to improve upon the sweet dumpling squash. A newer squash to the commercial marketplace the Carnival has seen an increase in popularity in the United States as a result of food and lifestyle bloggers writing about finding it and utilizing it as a decorative gourd during holiday seasons and then happily discovering it additionally provides a flavorful eating squash.

Geography/History

The Carnival squash is produced from descendants of squashes native to Mexico and was introduced to the market in 1991. It is believed to be a hybrid cross of the sweet dumpling squash and a green acorn variety known as green table queen. Even though considered a winter crop, winter squash such as the Carnival need sunshine and warmer weather to flourish. Seeds should be planted after the last frost of the spring. Squash should be ready for harvest within eighty-five days of planting. Carnival squash plants grow in a semi-bush fashion which makes them an ideal squash for smaller growing spaces.

Featured Restaurants

Restaurants currently purchasing this product as an ingredient for their menu.

Baci San Diego CA 619-275-2094

Recipe Ideas

Recipes that include Carnival Squash.
